Yes, we do not use any added growth hormones and at harvest our animals are antibiotic free
No, we are not classified as organic. We are natural, grass fed, Non-GMO corn finished. When absolutely necessary, our cattle do receive vaccines which have a withdrawal date for slaughter which is inspected and tested by USDA facility

We use primarily black angus influence cattle with registered black angus bulls

Dry aging is the process in which larger cuts of beef (carcass) are aged from weeks to months depending on the market before being trimmed and cut into steaks, roasts, and grind. It's a process that not only helps the steak develop flavor, but also makes it far more tender than it would be completely fresh
All beef will be vacuum sealed in individual steaks cut packages. If you choose to purchase a 1/2 or whole beef you have custom package size options for certain cuts such as roasts
Hanging weight is the weight the butcher gives us after the animal has been harvested, blood drained, head, hide, feet, entrails, & organs removed. The hanging weight is usually about 60% of the live weight. Weight percentages vary.
Packaged weight is what you, the consumer actually take home in beef. This is typically 60-70% of the hanging weight. Our historical data is 67% but every animal is different
Whole Beef Example:
Live weight 1250lbs x 60% = 750bs (approximate hanging weight)
Hanging weight 750 x 5.50lb = $4125 (approximate price whole beef)
Hanging weight 750 lbs. x 65% = 487 lbs. packaged beef (approximately)
1/2 Beef Example:
Live weight 1250lbs x 60% = 750 lbs. x 0.5 = 375lbs (approximate hanging weight)
Hanging weight 375 x 5.50lb = $2062.50 (approximately price half beef)
Hanging weight 375 lbs. x 65% = 243 lbs. packaged beef (approximately)
